This hands-on, field-to-table workshop is designed specifically for any one new to sausage making, home processing, or wild game charcuterie. We break down the entire process into simple, repeatable steps so you can confidently make delicious, safe summer sausage at home using your own harvested game. No prior experience or special kitchen skills are required. We will provide all of the venison, pork, and seasoning blends for the class. At the end of the day, you will take home the summer sausage you hand crafted during the class, smoked and fully cooked, ready to share with family and friends. ALAN S LAMB
